Vegan French Toast (Very good)

1/4 cup raw cashews
1/4 cup soy milk powder
2 cups water
1/2 tsp salt
2 Tbsp oil
2 Tbsp honey
1 cup all purpose flour

1. Whiz in blender and pour into a flat dish.
2. Dip bread slices in mixture and fry until brown.
3. Serve with fruit sauce or syrup.
Approximately 12 slices
We had a French Toast Jamboree at our church in February and we gave them two options; french toast with eggs or french toast using the vegan french toast recipe given above. Most of us used the vegan one and it is very good! I had some of the recipe left over and I brought it home to freeze. At our camp meeting in July we're having a French Toast Jamboree on the Sunday to close camp meeting. I'm make some fresh and I'll take the frozen along to see if it is still edible. If it is, I'll let you know. It would be nice to make ahead and freeze it and then use it as needed. That's the way we singles do things, isn't it? Very Happy I'll let you know the outcome.
