Oven-Fries Italiano

One of the things that I love to buy at the grocery story from time to time is potato wedges. And they are delicious!! Yes, they have some fat but, certainly not like the fries one buys at fastfood joints.

I found this recipe and now I will not have to buy them at the store:

2 large all-purpose potatoes (about 1 pound unpeeled)
1/2 tbsp butter
1/2 tbsp olive or other vegetable oil
1 clove garlic, minced or crushed through a press
1/2 tsp basil
1/2 tsp oregano
1/4 tsp salt
1/8 tsp pepper (optional)
1/8 c grated parmesan cheese

1 Preheat oven to 425 degrees. Line a baking sheet with foil and lightly grease the foil.

2. Cut the potatoes lengthwise into 1/2-inch-thick wedges.

3. Melt the butter on the stovetop or in the microwave. In a large bowl, combine the melted butter, oil, garlic, basil, oregano, salt and pepper. Add the potatoes and toss to coat well with the herbed butter.

4. Arrange the potatoes on the baking sheet. Sprinkle evenly with the Parmesan.

5. Bake the potatoes for about 30 minutes, or until they are tender and golden. Twice during the cooking time, use a spatula to move the potatoes around to ensure even cooking.

Serves 2

Time-Savers:
Do-ahead: The herbed butter can be made ahead.

Afghani Potatoes

2 1/2 pototoes, peeled
2 Tbsp oil
3/4 onions, diced
1 can tomato sauce
1/4 tsp salt
Dash of garlic salt

Saute onions in oil until dark brown (almost burnt). Add potatoes, cut up into large bite size pieces. Cook until golden. Add tomato sauce and turn twoice. Add 2 cans of water or until potatoes are covered. Add seasonings. Cook until potatoes are tender.

Oven Roasted Potatoes

1 envelope Lipton onion soup mix (I like using Shake and Bake)
1/4 c olive or vegetable oil - or less
1 lb potatoes, cut into large chunks

Place all ingredients into a plastic bag and secure. Shake the ingredients in bag and then empty onto a shallow baking pan. Bake, stirring occasionally, for approximately 60 minutes at 400 degrees F. Serves 4
