There is a recipe for Millet Cheese Cake that is an excellent and tasty one. I used to have the recipe and have lost it or misplaced it. I would like to use again but, can't find it. Do you have one and could share it? I'd really appeciate your help in finding it again! Thanks.
I think I found the recipe but don't remember there being any cashew nuts in it. They do say they can be left out, so I'll try it both ways and let you know which was my previous recipe. I do know that this recipe tastes very good especially with a graham cracker crust.

Lemon Cream Pie or Pudding

1/2 c millet, uncooked
2 c water
1/2 tsp salt
1/3 c cashew nuts
2 T lemon juice
1 inch lemon rind
1/4 c honey

1. Cook millet in water until water is absorbed. Place in blender with all ingredients and blend very smooth. Pour into baked shell. Cover with plastic wrap and chill. Serve with creamed blueberries.

2. Nuts may be omitted and the taste hardly changed. This is a delicious pudding also. Flavour may be varied by using 2 c softened prunes, or 1 T carob powder, or 1 ripe banana.
