Chickpea Salad Sandwich

Ingredients:

1-15 oz can chickpeas, drained well
4-5 tablespoons mayonnaise
1/2 tablespoon lemon juice
1 tablespoon nutritional yeast
salt, to taste
1 stalk of celery, diced in small pieces
fresh dill, to taste
pinch of garlic powder
Whole-grain bread

Directions:

Begin by mashing the chickpeas in a medium mixing bowl, using a fork or potato masher. For texture leave a few chickpeas whole or just partially mashed. Add the remaining ingredients and mix well. This will make enough for about four big sandwiches, and keeps in the fridge for 4-5 days.

Serves: 4

Raisin Bagel, PB and Apple Sandwich

1 cinnamon raisin bagel
1 tablespoons peanut butter
slices of apple

Directions:

Slice bagel in half.

Spread peanut butter evenly onto one half of bagel.

Layer on the apple slices, sticking them to peanut butter.

Add more peanut butter onto other bagel half if you want the extra PB.

Mash both bagel halves together into sandwich form.

Serves: 1

Quick and Easy Tofu Veggie Sandwich

Ingredients

bread
firm tofu, cut to about 1/2 inch thick
lettuce
soy sauce
salt and pepper
zucchini, sliced lengthwise (or veggies of choice)
avocado and/or hummus or other spread

Directions:

whole wheat or sliced French bread

Pop two slices of bread into toaster.

Heat up a bit of oil in a skillet (Just about half a teaspoon which is enough). Spread around oil and add your thick slab of firm tofu (not silken, it will fall apart).

Add zucchini slices (or other veggies) next to the tofu.

Drizzle a little soy sauce onto the tofu, not so much that it runs all over, but enough that you can spread it around and cover the tofu.

Crack some fresh black pepper all over everything, and sprinkle some salt on the veggies.

After about 2-3 minutes, flip over tofu and veggies and repeat with the soy sauce and salt and pepper.

Your bread should be done toasting by now. Take it out and add some avocado slices or hummus or basically anything that is spread able and a bit sticky (if you like Vegenaise, that would work well here).

Add lettuce to one slice and the tofu and veggies to the other slice and assemble!

This sandwich can get a little unruly, so hold it together with a couple toothpicks and cut it down the middle. Whatever way you do it, it's delish!

Best Avocado Sandwich

Ingredients:

2 slices multigrain or granary bread
1/2 ripe avocado
1 teaspoon sunflower seeds
1 teaspoon spring onions (scallions)- chopped
few drops of lime juice
freshly ground salt and pepper to taste

Directions:

In a small bowl mash avocado with fork until smooth, add onions and lime juice.

Spread the mixture on 1 slice of bread
Follow with sunflower seeds, salt and Pepper (optional). Put second slice of bread on Top, and enjoy this mouthwatering sandwich!

Serves: 1
